Flax and Wheat Challah
Heat oven to 350. Grease and flour 4 loaf pans.
Use a large metal bowl.
Mix 1 TBS Yeast
with 1/3 c Honey
Add 3 C warm Water.
Mix together and cover. Proof for 5 min.
Add 5 Eggs
1 c Extra Virgin Olive Oil or Grape Seed Oil
1 tsp Salt
1/4 c Flax Seeds
3/4 c Flax Meal
4 c Whole Wheat Flour (nice bread quality)
about 11 c White Bread Flour - add more or less until the dough is easy to knead.
Knead dough using flour or oil to keep it from sticking to your hands. It is ready after it is springy and rubbery to the touch. Rub with oil. Place in bowl and cover. Let rise for about an hour. Punch down. Break into at least for sections and braid into challah. Let rise for 20-30 min. Bake until brown and sounds hollow, about 45 min.
