Does anyone else struggle with this? Sometimes grocery shopping is just plain inconvenient. Like right now. Life suddenly down poured. Going to the store has been a matter of running in and grabbing a quick item between everything.
How the kids moan, "Mom there is nothing to eat."
But really is there nothing to eat? Let's examine this more closely. I spy with my little eye a loaf of bread, almond butter and jelly, salad, canary melon, chocolate rice milk, apples, oranges, blueberries, cucumbers, onions, celery, carrots, zucchini, peppers, yogurt, organic, nonGMO tofu, veggie kugel and the slice of heaven raw chocolate tarts.
Sometimes in life, less becomes more. Having been so busy, we have had to be creative and use what is there. I haven't had to throw out food this week: it got eaten. Last night, I had to get creative and made a veggie kugel...which has an extra benefit: a new recipe to add to this site. My oldest commented last night on how during the past few days, she has seen me back to being creative and making yummy foods. Less has equaled more creativity and appreciation of what we have.
Soon we are about to hit the point of less is, well, just plain not enough. So, I had better pack my grocery bags, load the kids up, and go to the store. Perhaps, this time, I should buy just enough or a little less than expected and see what tasty morsels can be created with that. And maybe, just maybe foster a bit more appreciation for what we have.
