Winter break is over. Many new beginnings are on my horizon: divorce, moving, starting businesses, etc. Life sometimes comes at us fast and what is the first thing to fall to the wayside? Taking care of ourselves. Yet when do we need to be very aware of eating correctly, exercising, and getting proper rest? When extra challenges mix themselves into normal daily life.
Not wanting to fall prey to the exhaustion and potential illnesses that follow in the wake of stress and not taking time to take care of myself and my children, I am finding myself coming up with a game plan. Instead of buying filler junk food, reminding myself that an apple and and apple slicer is fast to use and good to eat. Having the kitchen prepared with hard boiled eggs, washed celery and soy nut butter, cheese chunks (follow your heart or dairy) and rice crackers, sea weed toasted with oil and sprinkled with salt, blueberries, grapes, bananas, carrot chips, refried beans and varieties of crackers, cans of tuna or salmon and Mediterranean Terra chips...the list goes on. There may be little to no time to plan for and prepare a meal. Sack lunches while running out the door may be reality. But since I have to go to the store and do my grocery shopping, I had better go prepared.
Making sure good healthy things are on hand is key to not just surviving these times that come upon us. I want for us to thrive. It may not be vegetable lasagna, but it is sufficient and will uphold my goal to provide nutritious food for my family.
