One of the challenges of having children with food allergies or intolerances is the social aspect of eating. Watching friends eat things, that perhaps the child ate before and now is not able to, is often a cause for distress and tears. Many times, I have heard laments about wanting to "eat normal food like other kids".
Pizza was one of those food items for us. Recently, we discovered Namaste gluten free Pizza Crust mix. It took us a bit to figure out how to make it. It must be baked until it feels dry and hard. Then it must be fully cooled. If it is not, adding the moist ingredients will make the dough gooey. When it is cooled then the toppings can be added and baked immediately - otherwise it becomes gooey. Pizza made with this mix tastes very yummy, but it is very work intensive.
