These are loose amounts in ingredients. I will be making some more in the next couple of day and will take down exact amounts. The kids LOVED this! They gobbled down 2 pans full in 1 1/2 days. They said "I thought zuchinni bread was not sweet". I had added honey and apples to mine and it was pleasantly just perfect. I also made it vegan as eggs of all sorts make me sick and give me bad stomach aches.
2 cups gluten free flour
2 cups zuchinni, shredded
around 4 to 5 small apples, chopped
around 1/3 cup raw honey
handful of chopped walnuts
1 to 2 TBS extra virgin olive oil
celtic sea salt
1 tsp cinnamon
mix all ingredients (with exception of zuchinni and walnuts) in blender. Add the rest in and stir. gently oil pan and pour in ingredients. bake at 350 for 40 minutes.
