I am going to have my work cut out for me this year as I try to take back our health and our plates. As we sat down to dinner tonight, which was gluten free vegan lasagna (with eggplant & zuchinni as noodles) and also green juice (pineapple, cucumber, kale, ginger root, celery and apple) I lamented to my kids about their food choices over this last year and their eating becoming so bad and my daughter who is 9 now said to me. "Well you are the one who prepares our meals"
Yes I am and unfortunately I have done a really poor job of meal planning this last year. With my husband not being home and starting a non profit business for rescue dog transport, life just got away with me and somethings fell by the way side.
No more. I have been doing really good at juicing for the last couple of weeks at least once per day. green juice. Greens are so important to overall health and we all are or have been seriously lacking in them.
So as we all acclimate back to regular and healthy meals - more green smoothies, green juices, salads, soups, and more. I am sure I will have to deal with some children attitude. But hopefully it will help improve their overall mental well being. they have been seriously going through some grouchiness this last 6-7 months.
It will definitely be a mental shift for all of us as we once again shift from what is easy to what will truly nourish our bodies. We will have to all shift our mindset - myself included. I got to the point I was just not enjoying the kitchen so much. But I do enjoy it if I have a plan and give myself time to prepare and make a meal with love for the family.
