There is always pasta right. BUT is that the healthiest choice? Ultimately, probably not. It is however an inexpensive vegetarian meal and you can spruce it up by adding vegetables into your sauce, you can do homemade sauce, add a salad. and you have a delicious and fairly cost effective meal.
Tostadas, tacos, burritos - beans can be light on the wallet, especially if you buy them in the dry form and soak and cook yourselves, lettuce, tomatoes. you can make your own tortillas. This could be fun and definitely more healthy.
In fact many traditional mexican dishes seem to fall into this category. There could be the possibility of some tuna dishes, though ultimately too much tuna is probably not the best idea with the exposure to mercury that we can get from it. Fish, if you find a deal can be good.
How about squash or pumpkin soup? vegetable bean soup?
