I used homemade pecan butter in the batter for the nut butter & did not use as many eggs. But we were using duck eggs so perhaps that made a difference. I only used 2. But the batter looked about right to me.
For the syrup, instead of lemon, I juiced some blackberries and made the syrup that way instead. No vanilla.
These were truly very tasty!! If your kids give you grief about eating their veggies, well this would be a great way to "sneak" them in. Since they have cooked squash in there. You definitely can not tell! They would be getting all the fabulous nutrients and never be the wiser.
Last night, I made some "pecan candy". It tasted like peanut brittle. But there was no peanuts in it. It was SUPER yummy!!!!! oh my! We all LOVED those! and were sad when they were all gone! A trip to the candy factory can give one some ideas on how to make some yummy "candy" and without the corn syrup. ;)
