crust : (optional)
1/2 cup dates
1 cup soaked and dehydrated almonds (if time, if not use just regular almonds)
4 medium sized ripe avocados
1/2 to 3/4 cup cocoa powder (for tonights pie because i was out of cocoa I used hot chocolate powder)
2/3 cup raw honey
2/3 cup distilled water
pinch of celtic sea salt
2 TBS coconut oil (optional)
Crust: if making it, blend the almonds in the Vitamix to a powder. Then add the dates. You may need to add a little water to make it move. You want it to be slightly moist but not runny.
Filling: Put everything into Vitamix and blend. After blended, take a taste test! See if you need to adapt this at all to your personal taste. The beauty about raw "cooking" is that what it tastes like will be what it tastes like and is so easy to adapt it. When you have it to a flavor you find pleasing.....
Put crust into pie pan, smash down. Again this is optional. When I am making for my own family I do not use the crust but when making for guests I would make it with the crust. Then add filling. Smooth out with a spatula. Put into freezer overnight.
When ready to serve you could put sliced strawberries on top. Slice and enjoy!
**I do not personally use the coconut oil now but have at times in the past.
