myself on the otherhand i believe i am getting better. guess we will seew what the GI panel says for me. I ahve lost weight. i feel better mentally and emotionally. i still ahve my neck and knee issues from the car accident. but my GI issues seem to be clearing. i have decided to add beef back into my diet. I eat absolutely no processed foods. everything is from scratch. I am not hungry all the time. i feel more balanced. i only feel gassy if i eat something i am sensitive to. i am doing the ioderal supplement, probiotics and digestive enzymes. those are the only supplements i am personally taking. my kids on the other hand are on a buttload of them. I drink kombucha almost every day. i eat sauerkraut sometimes. not on a regular basis though. i love fermented foods. i eat mostly veggies. some fruit - i will drink a smoothie during the day but that is about all the fruit i am eating now. I found out i can't even eat duck eggs. they make me feel horrible. i already knew i couldn't eat chicken. just cooking them for the kids makes me feel so incredibly nauseous. the smell - oy the smell. Which wipes out coconut flour bread for me also. sometimes it can be challenging to be so limited i plan on buying the "paleo diet cookbook" next week. I was flipping through it today and it looked like there might be some good things in there.
i did buy elanas gluten free muffin cookbook - everything is from almond flour or coconut flour so one of the kids have one or the other. I am pretty excited about that. really need help with treat ideas.
i did find a pecan pie bar recipe that i made for thanksgiving day that they really liked. and also made some cookies that they all loved and sooo simple! just walnuts, raisins, coconut for e and almond flour for c. y can have either so he can usually eat either one.
so WHAT did the kids for thanksgiving?
thursday - meal 1 with inlaws
i made kosher organic turkey. y ate that and a large salad. i had a burger and salad. and we both had tea.
friday - meal 2 with my parents
they went all out and bought all kosher food and made only things the kids could have.

it was totally delicious and yummy! and it was so nice of her to go out of her way to make something the kids could all enjoy! allergies doesn't mean you ahve to starve. you can still have an abundance and be happy. my daughter for her school work today for a happy memory drew a picture of thanksgiving. it meant a lot to her also. so chins up... health can be found right??
