Also my digestion is better overall. I am anxious to see what kind of changes are there on paper in addition to how i feel live and in person ;)
I also did a vitamin and mineral deficiency panel. I should have the test results back soon. If i can get my gut healthy and then restock my body with all the vitamins it was missing from having a GI issue then maybe i can get back in business and feel totally amazing again.
Anyhow I just wanted to note this as i find it interesting i no longer really have a sweet tooth. That was something i was constantly craving was sweets and/or chocolate - not the case anymore.
Tonight i made some stuffed bell peppers for dinner. They were really good. Satisfying and filling. I was done after that. I had some herbal tea later on. But that was my meal. The kids and husband all really enjoyed the ppers also. They also had some salad and spaghetti squash. I should have made more bell peppers for hubby. I think he could have used a couple of more. Next time, I will remember that.
Earlier I made some granola. That was so tasty. Way better than what you can find in the store. (at least in my opinion ;)) for those of us that are limited. This was so good. It has been a long time since i have had a cereal and this didn't take that long to make and was all stuff that is allowed for everyone.
this weekend i also ventured and made some "flat bread" I didn't have any. I wanted to save it for the kids as i didn't have a lot of duck eggs so couldn't make a lot. The kids really enjoyed it. They made chicken sandwiches. They had homemade pickles, org lettuce, some other veggies and org chicken on their bread. They gobbled it up and had hoped that there was more. this week maybe.
this week i was very proud of myself. I made a menu for the whole week and went shopping. I planned out all the meals and bought some snack foods (fruit and dried fruit for the kids) and it should hopefully last through thursday. I did thursday to thursday. I am hoping to avoid the many trips to the store this week. Also it was nice to actually sit down and get this done with the hopes i will not have to think about planning and what i need to do. I can just make some FOOD. My hope is to get into this habit and to have a months worth of menu plans done. I now have 2 weeks, 2 more weeks to go. I start school next week and i just want to have a monthly menu plan that i can follow at least until summer. then i will mix it up as other foods come into season again and we can do some different types of foods again.
I had some really productive days last week and was really proud of myself with all the yummy foods and treats that we were able to come up with.
Planning = making life so much easier.
