Afraid our dinner last night was one of those nights, though my daughters faces of dislike did manage to provide some comic relief for all.
Last night was raw vegan night. There are MANY tasty raw vegan things, and 3/4 of the meal was great, but the other 1/4 left something to be desired - at least by most of us anyway. My son had his own way of eating it and got it down quicker than everyone.
First course was fresh pineapple and dandelion green juice. This was delicious! I have been craving this for sometime and I was so excited actually find everything I needed at the store this afternoon! It was as yummy as I remembered it.
Then we had a chopped which my daughter so lovingly prepared. She did a super job! How can you go wrong with a salad right? It was very good. Everyone enjoyed and my son had seconds..... and thirds....
Desert, FANTASTIC! I made raisin nut balls. rolled in almond flour. These were good and we have some left over! Treats for the next day!
Lastly, and well definitely least, was the main course - a fettucine alfredo. This used zuchinni for the "pasta" and then a nut mixture for the sauce. My reaction to this was that it made my stomach turn. My daughter tried dousing it in some natural honey mustard sauce. My stepsons slowly ate it. My son... well he turned it into not quite raw... but he got it down quick and actually thought it was "good". He added ketchup and daiya cheese to it. I would have never thought to add that to the meal, but to each his own right? He was the only one out of the 5 of us who actually enjoyed this part of the meal. He told me that he thought that the sauce just needed some sweetener. Maybe so? But I don't plan on making this mix again. It is good to know that my son is thinking about what would make something a better meal though. In his enrichment, he does this once a week, he is taking 2 cooking classes. He wants to grow up and be a chef when he grows up. His idea may be right. Next time I make raw vegan night and if he wants to help me in the kitchen. I will gladly let him ;)
That is the beauty about raw vegan - it will taste the same when you are preparing it as when it is done. So if you need to tweak it along the way you can!
So while, the pasta will be out again. I look forward to our next raw vegan night that I can try something else out that I know to be a good and tasty meal :)
