We were blessed with a lot of peaches from friends who have them on their trees! It has been wonderful! I have been able to share some of them with a couple of other friends as well. Before I froze the last of what i got this morning because they were sooo ripe, they would not have lasted long enough to eat i dont think, I wanted to try out a cobbler. I had promised the kids and well let's just say creative factor has not been super high here lately with being in school full time and the return of homeschooling the kiddos and all the activities and appointments and just life for us! But tonight was the night!
4 cups sliced peaches
around 2 TBS raw honey
2 cups gluten free flour
around 1/2 to 1 tsp celtic sea salt
1/4 to 1/3 cup raw honey
6 TBS extra virgin olive oil
how to make -
1. place filling ingredients in pot, and simmer over low heat. let them warm and mix together.
2. While you have the filling ingredients, assemble the topping - you can mix by hand if you like, however, I put it all in the vitamix and whirred it around until it was the consistency of moist and thicker than cake batter.
3. Take the peaches out of the pot and pour into a round pan and smaller square pan. Smooth topping over the peaches.
4. Bake 25 minutes at 350 degrees.
