fish sticks (homemade from gluten free almond flour cook book) these were a hit with those that ate them. Everybody enjoyed! again another reason to get that book!

So i did ALL my shopping for the week today and i am uber proud of myself! that felt so good. It will be so nice to NOT be at the store absolutely every day like i have been due to being so disorganized. So i am excited about that. it feels good to have a plan and to be thinking about trying new things again.
I did experiment some with the coconut flour. I found a recipe on www.elanaspantry.com for muffins that worked out really good and was super yummy! the bread out of the coconut flour recipe book was not so good pretty crumbly. am going to have to work with this and play with it and see what happens. But will keep trying!
Feel like i am slowly beginning to piece my life back together and find some order. When you get a bunch of bombs dropped on you at the same time well sometimes mass chaos ensues. ha. yes the kids continued to eat good but it was a lot harder then it would have been if i had just gotten myself more organized.
I feel good that we are juicing again daily. Also have the kombucha going! this stuff is GREAT! my next adventure is to dive into the world of dehydrating again! my husband got me a beautiful excalibur dehydrator and now i really want to get to using it and creating up some yummy foods for everyone! so that will be my next step when i am ready. hopefully soon. kids are adjusting fine as long as i have stuff for them to eat they are generally happy.
The fish sticks did go over really good tonight. they smelled really yummy! it is nice when i make something and the family goes mmm this is really good :) even the gluten eaters though they dont really get any gluten in the house. I have made the house a gluten free zone just because it is TOO hard to be a short order cook and have something different for everybody. it is so much easier to just try to make a meal plan with some deviations but not HUGE so meals are do-able!
