Tonight was a new mealtime adventure. We tried a Chinese meal - kung pao "chicken". Although there was no animal product to be found in the meal, we used organic non gmo tofu instead. It was not too hard to make which is always a plus. Lots of fresh veggies, some ginger (which helps both the immune and digestive system), cashews, the special sauce topped on rice. The final verdict was, everyone liked it. We enjoyed it with a glass of carrot, apple, celery, spinach juice.
I was so glad. Having never made Chinese before I had no idea what to think when he said that or if this was going to be a huge meal time flop.
Healthy, delicious, easy to prep. Definitely give it two thumbs up!
