On another note, we are gradually going back to more vegetarian again - which I know will make all the staunch vegan and vegetarians happy. We are eating vegan generally 4 nights a week now. I am not sure if we will ever be able to get back to that spot where we are fully vegan but I need to stay true to my own self and conscious. The one thing that was fully impressed upon me in college this semester which I already knew BUT it was good to have official "schooling" to back it up, is that humans can eat pretty much any style of diet that they wish. That there is not ONE right way to do things. However, regardless of which you choose you need to make sure you are getting your fruits and vegetables. Everyone in the family is re-adapting, although I am sure they would love to have one of the nights not be bean and vegetable soup otherwise coined in our house as "survival chow". Stay true to yourself, do the best you can, and follow your instincts.
